A partir de este cambio los viticultores saben cuando ser\u00e1 la vendimia. Antiguamente se iba probando la uva a partir de este momento hasta que el viticultor determinaba cu\u00e1ndo comenzar con la vendimia&nbsp;valorando su sabor dulce y el descenso progresivo de la acidez.
